☀Starting your day with the right ENERGY and the right STATE OF MIND really is the KEY to success!

Approaching suppliers, colleagues, guests, and the people you love with the right appreciation, joy and willingness to CONTRIBUTE, this has made an amazing impact to my relationships, work opportunities and it essentially made me a better human being.

I completely agree with the following quote that I read quite some time ago:

The majority of Hospitality Professional don’t give to these aspect the attention they deserve and this results in staff leaving their workplace, relationships that end and many more serious consequences.

Our energy and our state of mind is also what makes us UNIQUE and AUTHENTIC and is what attracts people to wanting to be in a relationship or do business with us.

Most of the time Bartenders, Managers and Owners try to be somebody else, copying strategies that don’t work for them, modelling the wrong mentors, replicating Cocktails and techniques just for the sake of it, instead of looking within, at the resources they already have and how to match them with their values in life.

In addition, all this has an enormous impact on our products and services too..so it even becomes a MONEY discussion.

There has been an experiment with 3 Bartenders making

  • the same drink
  • with the same recipe
  • with the same amount and type of ice
  • with the same tools
  • shaking with the same exact duration
  • same glassware and temperature

..YET the results where completely different!

Have you ever though that even the melting rate of your ice is different when handled from one member of the Staff to the other?

It all comes down to what we put in as Bartenders or other Hospitality Professional: ENERGY+HEART+VALUES

THE HIGH CLUB PANETTONE COCKTAIL

A delicious Haig Club Whisky Cocktail that I created for you to enjoy your holidays with friends, family and loved ones!

INGREDIENTS:

Raisins infused HIGH CLUB Single Grain Scotch Whisky
Fresh lemon juice
Bitter orange marmalade
Galliano foam
Candied oranges
Vanilla sugar for the rim

ITALIAN VERSION

INGREDIENTI:
HIGH CLUB Single Grain Scotch Whisky infuso con uva sultanina
Succo di limone fresco
Marmellata di arance amare
Spuma di Galliano
Arance candite
Zucchero vanigliato per la bordatura

“Where is the Turkey?” ThanksGiving Day Cocktail

Happy ThanksGiving day to everyone with my signature recipe:
30 ml. Don Julio Blanco
10 ml. Ramazzotti
15 ml. Lime Juice
15 ml.Cinnamon Syrup
20 ml. Yellow Chartreuse cooked with 2 Sprigs of Rosemary
Watch the Video Below to learn how to make one:

In a cooking vessel add the Chartreuse and a spring of rosemary. Using a blow torch cook the ingredients until you get an infusion.
Strain into a Russian Imperial Mug with Crushed ice. Add all the other ingredients helping yourself with a swizzle stick. Add more crushed ice.
Garnish: with a Flamed Rosemary Sprig and Caramelized Kumquats. “Na Zdorovie”
Inspiration: I made this drink during his visit as Guest Bartending at City Space Bar in Moscow on Thanksgiving Day.
I was inspired by the way people cook their turkeys to celebrate.
When I gave it to try to my first guest in Moscow, after explaining this story he said, so….”Where is the Turkey?

PUMPKIN IS THE NEW BLACK – OUR NEW FALL COCKTAIL

Here we are with another great recipe for your guests to enjoy during this Autumn season:

  • Pumpkin siphon-infused Ketel One
  • Orange & ginger jam
  • Lemon & mandarin mix
  • Pinch of turmeric
  • Double strain
  • Serve with love
  • Smile and..
  • ..smile back

Watch the video to see how easy it is to make a fast infusion using a syphon:

In case you don’t have a syphon, you could dice the pumpkin, boil it, refrigerate it and add it to the drink by muddling it.

ABOUT ME – CHI SONO

Dear Hospitality Professional,
I’ve had the enormous pleasure to work as Bartender, Bar Manager and Supervisor in some of the world’s finest establishments, including the luxurious Claridge’s Hotel and  Harrods’ in London, the Stravinskij Bar at the Hotel De Russie in Rome,  the Relais & Chateaux “Sheen Falls Lodge”  in Ireland, the Mandarin Oriental Luxury Hotel in Barcelona and the Boutique Bar in the exclusive five star Ohla Hotel also in Barcelona.

What also gave me immense privilege, was conducting successful onboard cocktail & bar skills training programs, focusing on bar-set up & cocktail making techniques required to allow crew members, to recognise key qualities in spirits, liquors and fresh ingredients in order to balance flavours and make high end drinks on Cruise Ships and luxury Yachts.

International magazines have very meticulously quoted me as an awarding winning master and an expert mixologist.

I’m currently covering the prestigious role of European Brand Ambassador for 17 Countries in Western Europe for the Diageo World Class Bartending Competition, as Judge, Speaker, Trainer and Consultant.

Having travelled the world, I now speak Italian, English and Spanish

I have also been crowned with the prestigious title of “Ireland’s WORLD CLASS Bartender of the Year 2010” advancing to the Global Final in Athens, where I was  placed 3° in the world amongst 9000 Bartenders.

I’m very proud to be part of the esteemed judging panel for both Tales of The Cocktails and 50 Best Bars and have been nominated at Tales amongst the 10 BEST INTERNATIONAL BRAND AMBASSADORS of the Year in 2015 and amongst the 10 BEST INTERNATIONAL BARTENDERS of the Year of the Year in 2012.

Having developed cocktails around the globe, I’m really excited to have my recipes listed in some of the best Bars around the World and on relevant Cocktail Books like:
